Packed meal for today as I have 3 classes 📚 Having a nice homemade meal halfway through the day always reenergizes me and makes for at least 30min of break in my day. This one had baby carrots, purple sweet potato fries, a generous spoonful of hummus, a tofu scramble with peppers, spinach and sprouts 🌱 If you’ve never had a tofu scramble it mimics the consistency of scrambled eggs but has less saturated fat, less sodium and cholesterol 🍳
