I recently got some grain free granola from @kitchfix with nuts and seeds and it inspired me to come up with these raw Raspberry and Banana bars with a vanilla berry granola topping

Ingredients :

1 cup medjool dates, pitted
¼ cup rolled oats
4 frozen bananas
½ frozen raspberries
½ teaspoon vanilla extract
¾ cup granola (mine is the strawberry vanille one from @kitchfix )

Directions :
We’re going to make the raw crust first by pulsing the pitted medjool dates and oats in a food processor until a paste forms. Press the paste in a rectangular pan and freeze.
For the banana layer : pulse 3 frozen bananas and the vanilla extract in a high speed blender or food processor until smooth and creamy. Remove pan from freezer and pour the banana layer on top of the crust. Freeze at least 30min before making the raspberry layer.
For the raspberry layer : pulse 2 frozen bananas and the frozen raspberries in a high speed blender or food processor until smooth. Remove pan from freezer and pour the raspberry layer on top of the banana layer.
Topping : sprinkle evenly the granola on top of the raspberry layer and press gently so the granola will set when the bars freeze.
Place the pan back into the freezer for at least 3-4 hours but it is best to let it set overnight.
Before serving cut into bars or squares and let it thaw for around 10min.
