Coming to you with a convenient meal prep recipe : a chickpea and spinach curry served with jasmine rice 🍚 🍛 This made 3 large meals for the week and I loved it !
Ingredients :
1 shallot, minced
1 tablespoon ginger
1 yellow onion, minced
5 cloves garlic, minced
2 cans of chickpeas, drained and rinsed
1 can of diced tomatoes
2 handfuls of spinach
½ cup coconut milk
1-2 tablespoons curry paste
1 teaspoon curry powder
1 teaspoon turmeric
Directions :
Heat a pan over medium heat and add a little water
Add the shallots, onion, ginger, and garlic. Let simmer until the onion is translucent
Add the chickpeas and tomatoes. Simmer for 5 minutes
Add the spinach and cook until soft
Add the coconut milk, curry paste, curry powder and turmeric
Stir well and simmer for 10-15min
Serve with accompaniment of choice, I used jasmine rice
