Today is #nationalpeanutbutterday so I have to share with you my peanut butter blondie recipe 😋
Peanut butter blondies with chocolate chips
INGREDIENTS
* 1 can of chickpeas (preferably organic), rinsed thoroughly and drained
* ½ cup peanut butter
* 1/3 cup unsweetened apple sauce or other natural sweetener such as agave or maple syrup * ½ tsp salt
* 1/3 cup vegan darks chocolate chips + reserve some on side for toppings
* ¼ teaspoon baking powder
* ¼ teaspoon baking soda
DIRECTIONS
1. Preheat the oven to 350°F (180°C) and line a rectangular cake pan (8x8 inch works best) with parchment paper
2. In a high speed blender or food processor, add all ingredients except chocolate chips and pulse until you obtain a smooth thick batter.
3. Add in 1/3 cup of chocolate chips and pulse again
4. Spread the batter in the lined pan i
5. Sprinkle a handful of chocolate chips on top.
6. Bake for 20-25 minutes
7. Let the blondies cool for around 20min before cutting them into squares and serving
