rainbow salad π
I just threw this together but here’s a rough estimate of what’s inside:
3 cups shredded iceberg
½ cup fire roasted corn (from frozen)
½ cup black beans (canned)
1/3 cup diced baked tofu
½ orange bell pepper, chopped
10 cherry tomatoes, halved
10 kalamata olives, halved
¼ cup raw pepitas
¼ avocado, sliced
a few thin slices of red onions
southwestern chipotle dressing
…..
for the southwest dressing:
¼ cup vegan mayo
1 tbsp lemon juice
1 tbsp chipotle sauce (made from blending a small can of chipotle chilies in adobo sauce with a bit of water)
½ tsp rice vinegar
½ tsp smoked paprika
½ tsp garlic powder
1/8-¼ tsp sea salt
…..
mix ingredients in a small bowl until combined
any unused dressing can be kept on an airtight container in the fridge for up to 1 week

tips: this salad tastes best with romaine lettuce instead of iceberg (has anyone heard about the E. coli outbreak surrounding romaine?)
shredded red cabbage (I didn’t have any)
and topped with tortilla strips (I was a little too lazy to make)π
